Habitat : Fallow land, dry fields.
Remarks : The white root is rich in protein, starch and pectin. It was cultivated and appreciated as much as the potatoe, in soups, mashed, and baked. The root, candied in honey, makes an excellent dessert.
Introduced to the U.S. where it is considered a noxious weed.
